Research activities

Dr. Cossu's research has focused on various aspects of applied microbiology and food safety microbiology, including: the use of new photosensitisation technologies to inactivate microbes in wash-water from fresh produce and the quantitative correlation between oxidative stress biomarkers and survived bacteria; the use of rechargeable antimicrobial films for surface disinfection and the destruction of bacterial biofilms; the rapid detection of low numbers of pathogens in food matrices using conventional PCR and RTi-qPCR without enrichment by removing PCR inhibitors with bentonite-coated charcoal and soluble starch; and the encapsulation of novel controlled-release emulsions in buccal films against fungal oral infections.
